Hello Kitty Pancakes

We bought this pancake maker on Facebook Marketplace to combine two of our favorite things - Hello Kitty and Pancakes.  It is small enough for use on the countertop, and it does not require the stove so even the younger kids could help pour with supervision.  This is a great Saturday morning treat.   


Recipe: 

  • 1 1/2 cups of milk 
  • 1/4 cups of vinegar (either white or apple cider works) 
  • 2 cups of flour (we use half whole wheat and half all-purpose)
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs 
  • 1 teaspoon vanilla extract 
  • 1/4 cup butter, melted 
  • cooking spray for pancake griddle 

Put the milk and vinegar together in a small mixing bowl to allow it to "sour" or turn into a homemade buttermilk.  Let sit for about 5 to 10 minutes while you prepare the other ingredients.  

Take all of the dry ingredients and mix them together.  

Pour the "sour" milk into the blender.  Add the eggs, vanilla, and better.  Add the dry ingredients.  Blend on low until incorporated, but be careful not to overmix.   Let rest about 20 minutes.  

Turn on the pancake griddle.  Spray with cooking spray.  

Pour the batter until it is covering the Hello Kitty face.  Make sure the ears also have batter.  

Leave on griddle about 5 minutes, and it will be golden brown.  

Serve with honey or syrup.
